Everyone in my house loves it and my 3 teenagers can all make their own meals from it if need be. I just throw 5 pounds of boneless skinless chicken breasts in my crock pot before I go to bed and in the morning, voila! They are finished cooking. And not only do I have chicken ready to shred, but I have amazing chicken broth as well. I either use it up right away in a recipe, or store it in a clean creamer container. I store it upright in my freezer and keep adding to it until it’s full, then throw it in my big freezer for later.

So how do I shred that chicken? I do not have a Kitchen-Aid mixer (yet), so I just use a big bowl and two forks. Make sure to shred the chicken while it is still warm, it makes it so much easier. I portion the shredded chicken into freezer bags or containers, write the date on them and off they go into the freezer or refrigerator.
Our favorite two meals to make with shredded chicken are Quesadillas and Wraps. Super budget friendly!
I use two large tortilla wraps and on the pan, lay the first one down flat. Then spread the already cooked shredded chicken, and this is where it gets fun, any toppings you like. My personal favorites are Sweet Baby Ray’s Barbecue Sauce, bacon bits and some cheddar or Mexican blended cheese. Others in my family make all different combinations. How about some mozzarella cheese, Frank’s Red Hot Sauce and cut up pepperoni? How about salsa and shredded cheese? The combinations are endless. I usually cook for about 8 minutes on 375°. Cut with a pizza cutter and you have a simple and budget friendly meal! Here is another great recipe for quesadillas.
Another super easy meal that can be tailored to your taste buds. Wraps can either be baked or microwaved. My youngest son makes these by himself for lunch and pops in the microwave for just 30 seconds. He puts chicken down the middle of a large tortilla wrap, and adds a little of that Frank’s Red Hot on it and zaps it for about 30 seconds. You can add salsa, cheese, just about anything you want for another quick and budget friendly meal or snack.
Shredded Chicken Enchilada Soup:
I love Enchilada soup!! We have long and cold snowy winters here in Central New York and I am always making soup to help warm us up, especially on the weekend after spending half the day in a hockey rink watching my boys play. This recipe is so quick and easy and super budget friendly. Just throw all the ingredients in your crock pot before you head out for the day and you come home to delicious Enchilada Soup. I always change a couple of things up though. I add the already shredded chicken instead of the raw chicken and I triple the amount of broth used. I like to dip tortilla chips or hot fresh bread in my soup. Enjoy!
